There are a few theories on this. One is that in 722 AD a monk, St Boniface, from Devon, went to Germany to spread the word about Christianity. So the legend goes, he used fact that a Fir Tree is broadly triangular in shape to describe the Holy Trinity, hence the fir tree became God's tree.

ancient mythology depicts evergreen trees as being symbolic of fertility and reproduction, and they were used in Pagan festivities in the Middle Ages. It is thought by many that the modern day Christmas tree is actually representative of "Yggdrasil," the giant ash tree of life from Norse mythology.
